In seattle there is a restaurant downtown called Ludi's that serves ube pancakes that are a giant purple pile of goodness.I wonder if there's a connection?

I've seen it in a lot of Filippo restaurants too, even here in Barcelona. And Chinese shops. As it's usually eaten with milk I don't go for it but it's not bad apparently
