Can't they just do in-person testing? Build a cluster of cheap, crappy dumb terminal from 40 years ago. Have students type out the source code live. Grade the work. Hell, let them use reference books! Just don't allow re-typing AI-generated code on notebook paper. They can cheat all they want in the interim, it'll all become clear on the midterm and final exam.
