If this is a pass-through router and can be self-hosted, why does it need to hit your servers? Is it primarily to collect conversation data?

no no on when you self host its completely of our server meaning chat hits the official api server of the provider you selected our server is not involved and data which is stored is mainly conversation pattern and your choices to optimise your experience and that too is stored locally so you can anytime see it or delete it and even on our server if you opt for hosted variant we don't store anything our server just acts as a place which hosted the same code which you can host locally just to add a bit of convenience thats it
