The mechanical act of writing is not thinking any more than talking is. Plenty of people are capable of written word vomit.
The act of agonizing over the words you put on the page is thinking. A lot of humans don't do it. The writers who talk about writing being thinking are in a bubble and don't realize that their process is not universal.
